Once distilled, our blend enters beautiful Adirondack Cooperage Barrels hand charred to our unique specifications. We then age our barrels in one of three locations, all offering different temperature swings, air flows, and aging environments. Our distillers taste “families” of coming-of-age barrels, meaning that the barrels were laid down at the same time and will offer more likely similarities. The barrels that best express individual characters of spice, oak, or sweet notes are separated to allow us to better blend our signature bourbon. By striving to create more consistency, our customers can count on each Black Button batch being as good as — or better than — the last. Every once in a while, however, we are lucky enough to find a perfect expression of our unique Four Grain Straight Bourbon Whiskey mash. Representing all three signature tasting notes of spice, oak, and sweet, these barrels become Black Button Single Barrel Straight Bourbon Whiskey. Our temperature controlled fermentation and proprietary pot, column, pot, column distillation method all contribute to our unique flavor profile, all before being set to age in our custom charred barrels.
The Empire Rye requirement to use local grains and barrel down at a lower proof, in combination with our harsh NY winters and hot humid summers, all contribute to the unique flavor of this product. Unfiltered to provide you with true and authentic flavor, our Rye is best enjoyed neat, on the rocks or in a traditional whiskey cocktail.
